225g Caster sugar

225g Margarine

4 large Eggs

220g self-raising Flour

Ice Cream Cones
This mix makes about 12 normal sized cones or 16 small ones.
Method
Mix caster sugar and margarine together until it is smooth. Add 1 egg at a time, alternate with flour and fold in the last of the flour.
You can get a cone rack from Amazon but I improvised with a rack from my oven. Put it onto something at either end so that the cones are lifted off work surface.
Spoon the mixture into the cone, about two thirds up the cone, and leave room at the top or they will spill out when baking. Bake for about 18 to 20 mins, Gas M 4 180C. Leave them to cool on the rack.
For the buttercream icing

150g Margarine

300g Icing Sugar
If you are using tablet margarine make sure its soft before you add the icing sugar.
Sieve the icing sugar into the margarine, and beat till smooth and pale in colour. You can add any colour or flavour to this. I kept mine plain because I wanted to be creative with my decorations, its up to you, this might look complicated but it really isn't!
I used a piping bag and nozzle, if you don't have one you could use an ice cream scoop or just spoon the buttercream into cone. I decorated mine with fudge pieces and caramel swirl, sprinkles with flake, and chocolate sauce with choc chips. You can sprinkle coconut on with a cherry on top, or even fruit such as strawberries or raspberries. Be creative and use whatever you have in your cupboards, don't worry the kids will soon devour them!!! Enjoy.
